How to make cottage cheese banana bread

Begin with preheating the oven to 350°F (180°C). Lightly grease a 9 × 5-inch (23 × 13 cm) loaf pan and line it with parchment paper.

Blend the cottage cheese until completely smooth and set it aside.

Mash the bananas in a large bowl until mostly smooth, leaving a few small chunks for texture.

In a separate bowl, whisk together the flour, baking soda, baking powder, salt, and cinnamon.

In a large bowl, whisk or beat the eggs with the honey (or maple syrup) and vanilla extract until well combined. Add the lemon juice and softened butter, mixing until smooth.

Stir in the blended cottage cheese until fully incorporated, then mix in the mashed bananas.

Gradually fold the dry ingredients into the wet mixture, stirring just until no streaks of flour remain.

How to bake the banana bread

Pour the batter into the prepared loaf pan and smooth the top. Sprinkle with sliced almonds for a crunchy finish.

Bake for 60–70 minutes, or until a toothpick inserted into the center comes out mostly clean with a few moist crumbs attached.

Let the banana bread cool in the pan for 10–15 minutes before transferring it to a wire rack to cool completely.

Slice and enjoy warm or at room temperature.

Moist, naturally sweet, and packed with banana flavor, this cottage cheese banana bread makes a wholesome breakfast, snack, or healthier dessert that you’ll want to bake again and again.
