- 1 small red onion , very thinly sliced
- 1/4 cup fresh basil leaves
- 2 tbsp fresh mint leaves
- 2 tbsp toasted pistachios or sliced almonds , optional
For the dressing
- 3 tbsp (40g) extra virgin olive oil
- 1 tbsp (15g) apple cider vinegar
- 1 tbsp (15g) fresh lemon juice
- 1 tsp (7g) honey
- 1 clove garlic
- 1/2 tsp (3g) Dijon mustard
- Salt and freshly ground black pepper , to taste
Instructions
- Cut the watermelon into cubes.
- Cut the peaches into small pieces.
- Arrange the watermelon, peaches, cucumber, and red onion in a large serving bowl or platter.
- Scatter the crumbled feta, fresh basil, and toasted nuts (if using) over the top.
