How to make soft pretzel bites

Begin by dissolving fresh or active dry yeast, sugar, and 1/3 cup of water in a large bowl for about 5 minutes. Then, add flour, salt, olive oil, and the remaining water. Mix and knead until the dough is smooth. Cover and let it rest for 15-20 minutes.

Preheat the oven to 425°F (220°C) and line two baking sheets with parchment paper. Divide the dough into 6 pieces, which is easy to handle and not sticky. Roll each piece into a thin 22-inch (55cm) rope and cut into 1 ½ – 2 inch (3-5 cm) pieces.

Boil water and baking soda, then dip the pretzel bites for 10-15 seconds. Remove with a spatula and drain on a wire rack. Place them on baking sheets, brush with beaten egg, and sprinkle with your choice of seeds or sea salt.

Ingredients
  

  • 4 cups (500g) all-purpose flour
  • 1 â…“ cup (320ml) warm water
  • 2 tbsp (30g) olive oil
  • 2 ¼ tsp (7g) active dry yeast (or 25g fresh yeast)
  • 1 tbsp (15g) sugar
  • 1 tsp (5g) salt

For Topping

  • 1 egg , beaten
  • Sesame and poppy seeds
  • sea salt flakes

For Simmering

  • 1 quart (1 liter) of water
  • 3 tbsp (45g) baking soda

Cheese Greek Yogurt Dip

  • 7 oz (200g) Greek yogurt
  • 4 oz (120g) feta cheese , crumbled
  • 1 tbsp fresh dill , finely chopped
  • 1 tbsp fresh parsley , finely chopped
  • 1 clove garlic , minced
  • 1 tbsp (15ml) lemon juice
  • 2 tbsp (30g) olive oil
  • Salt and black pepper to taste
  • a pinch of red pepper flakes , optional

Instructions
 

Prepare the dough.

  • In a large bowl add the fresh yeast or active dry yeast, add sugar and 1/3 cup (80ml) water and let it dissolve for about 5 minutes. Add flour, salt, olive oil and remaining water. Mix everything and knead until the dough is smooth and pulls away from the sides of the bowl.
  • Cover and let it rest for about 15-20 minutes.
  • Preheat the oven to 425°F (220°C). Line two baking sheets with parchment paper.
  • Divide the dough into 6 pieces. The dough is easy to handle, and not sticky at all, so you don't need too much flour to work with it.
  • Roll each piece of dough into a thin rope of about 22 inches (55cm).
  • Cut into 1 ½ – 2 inches (3-5 cm) pieces.

Dip the pretzel bites in baking soda water.

  • Bring water and baking soda to a boil.
  • Dip pretzel bites in the soda water for 10-15 seconds. Remove them from the water using a large flat spatula. Drain on a wire rack.

Prepare the pretzels for baking.

  • Place the pretzels on the prepared baking sheets. Brush the pretzels with beaten egg and sprinkle with poppy seeds or sesame seeds or your choice of topping and with sea salt flakes.
  • Bake the pretzels for about 13-15 minutes or until pretzel bites are deep golden brown.

Prepare the Greek Yogurt Cheese Dip.

  • Add all the ingredients, Greek yogurt, crumbled feta cheese, garlic clove, lemon juice, herbs, spices and olive oil into a medium bowl and whisk until well combined.
  • If you like a bit of heat, you can add a pinch of red pepper flakes.
  • Cover the bowl and refrigerate the dip for at least 30 minutes to allow the flavors to meld.
  • Before serving, give the dip a final stir and taste for any additional seasoning adjustments.
  • Serve the Cheesy Greek Yogurt Herb Dip alongside warm soft pretzel bites. Enjoy!
