This Strawberry Tiramisu is a fresh and fruity twist on classic tiramisu, made with layers of delicate ladyfingers, homemade strawberry sauce, and a light and creamy mascarpone filling.
Instead of the traditional coffee and cocoa, this version uses fresh strawberries and strawberry sauce to soak the ladyfingers, giving the dessert a beautiful pink color and plenty of fresh strawberry flavor. The mascarpone filling is made with mascarpone cheese and whipped cream, creating soft, creamy layers that pair beautifully with the sweet and slightly tangy strawberries.
It’s also a no-bake, eggless, and alcohol-free dessert, making it an easy option for summer gatherings, family celebrations, or whenever you want a refreshing dessert without turning on the oven.
The best part is that you can make it ahead of time. Let it chill for at least 4 hours, or preferably overnight, so the ladyfingers soften and the flavors have time to come together.

What Is Strawberry Tiramisu?
Strawberry Tiramisu is a fruity variation of traditional Italian tiramisu.
Instead of dipping the ladyfingers in coffee, this recipe uses a homemade strawberry sauce made with fresh strawberries, sugar, lemon juice, and water. The ladyfingers are layered with a creamy mascarpone and whipped cream filling, then chilled until soft and flavorful.
The result is a refreshing dessert with the familiar creamy layers of tiramisu but with a bright strawberry flavor.
Ingredients You’ll Need
For the Strawberry Sauce
- Fresh strawberries – the main flavor of the dessert. Use ripe, flavorful strawberries for the best result.
- Sugar – sweetens the strawberries and helps create a smooth sauce.
- Lemon juice – adds a little acidity and balances the sweetness.
- Water – helps the strawberries cook into a sauce.
For the Mascarpone Filling
- Mascarpone cheese – creates the rich, creamy base of the filling. Bring it to room temperature so it blends smoothly.
- Powdered sugar – sweetens the filling without adding any graininess.
- Vanilla extract – enhances the mascarpone and strawberry flavors.
- Whipping cream – gives the filling a light and fluffy texture. Your recipe uses 35% fat whipping cream.
For Assembly
- Ladyfingers – absorb the strawberry sauce and soften as the tiramisu chills.
- Fresh strawberries – used to decorate the finished dessert.
How to make strawberry tiramisu
Start by lining the sides of an 8-inch (20 cm) square springform pan with acetate sheets. Simple pans can also be used. Prepare the ladyfingers for two layers, trimming them as needed to fit the pan perfectly.
How to prepare the strawberry sauce
Combine strawberries, sugar, lemon juice, and water in a saucepan. Bring the mixture to a boil, then let it simmer for 5-7 minutes. Once cooked, use a vertical blender to puree the sauce until smooth. Strain the sauce through a sieve to remove any seeds, then set it aside to cool completely.

How to prepare the mascarpone filling
For the mascarpone filling, in a large bowl, blend the Mascarpone cheese until smooth. Add powdered sugar and vanilla extract, mixing until well combined. Gradually add whipping cream and continue to mix until stiff peaks form.
How to assemble the strawberry tiramisu
Spread ⅓ cup (80g) of the strawberry sauce on the bottom of the prepared pan. Dip the ladyfingers into the remaining strawberry sauce and arrange them in a single layer in the pan.
Next, spread slightly less than half of the mascarpone mixture over the layer of ladyfingers, using an offset spatula to ensure an even spread. Dip the remaining ladyfingers into the strawberry sauce and arrange another layer on top of the mascarpone mixture.
Transfer the remaining mascarpone mixture into a piping bag fitted with an ½ inch (1cm) plain tip, and pipe it over the layer of ladyfingers.
Cover the pan and refrigerate the tiramisu for at least 4 hours, or preferably overnight, to allow the flavors to meld together.
Before serving, decorate the tiramisu with fresh strawberries. Remember to store any leftovers in the refrigerator to maintain freshness.

Tips for Making the Best Strawberry Tiramisu
Use ripe strawberries
Because strawberries are the main flavor, choose ripe, sweet strawberries whenever possible. If the strawberries aren’t very sweet, you may need slightly more sugar in the sauce.
Let the strawberry sauce cool completely
This is important before assembling the tiramisu.
If the sauce is still warm, it can soften the mascarpone filling and make the layers difficult to assemble.
Don’t oversoak the ladyfingers
Dip the ladyfingers into the strawberry sauce just long enough to coat them.
They will continue absorbing moisture while the tiramisu rests in the refrigerator, so there’s no need to soak them until they’re completely soft.
Use room-temperature mascarpone
Room-temperature mascarpone blends more easily with the powdered sugar and vanilla, giving you a smoother filling.
Keep the whipping cream cold
The cream should be chilled before whipping. This helps it reach stiff peaks and gives the mascarpone filling enough structure to hold the layers.
Chill the tiramisu overnight if possible
Although you can serve it after 4 hours, overnight chilling is even better.
The ladyfingers become perfectly tender and absorb the strawberry flavor, while the mascarpone filling has time to firm up.
Use acetate for clean layers
For the neatest presentation, line the sides of your springform pan with acetate sheets.

Can I Make Strawberry Tiramisu Ahead of Time?
Absolutely. This is actually one of the best things about this dessert.
Prepare the tiramisu at least 4 hours before serving, but I recommend making it the day before. Keep it covered and refrigerated until ready to serve.
The extra resting time allows the ladyfingers to absorb the strawberry sauce and the mascarpone filling to firm up.
Can I Use Frozen Strawberries?
Yes, you can use frozen strawberries for the strawberry sauce, although fresh strawberries are preferable when they’re in season.
Frozen strawberries tend to release more liquid, so cook the sauce until you reach the desired consistency before blending and straining it.
For the decoration, use fresh strawberries rather than frozen ones.
Can I Use Other Berries?
Yes. You could experiment with raspberries, blueberries, or a combination of berries.
However, because this recipe was developed specifically around strawberries, changing the fruit will change the flavor and possibly the consistency of the sauce.
For a tested variation, I would keep this recipe as the strawberry version and link to your other berry Tiramisu instead.
Can I Make Strawberry Tiramisu Without Alcohol?
Yes, and this recipe is already alcohol-free.
Unlike many traditional tiramisu recipes that use Marsala wine or another liqueur, this strawberry version gets all of its flavor from fresh strawberries, lemon, vanilla, mascarpone, and cream.
Is Strawberry Tiramisu Eggless?
Yes. This recipe contains no eggs.
The creamy filling is made with mascarpone cheese, powdered sugar, vanilla, and whipped cream rather than eggs.
Can I Use a Different Pan?
The recipe was developed for an 8-inch (20 cm) square springform pan.
If you use a different size, I would recommend adjusting the ingredient quantities according to the pan’s surface area.
How to Store Strawberry Tiramisu
Keep the tiramisu covered and refrigerated.
Because it contains mascarpone and whipped cream, it should not be left at room temperature for extended periods.
For the best texture, serve it chilled directly from the refrigerator.
Frequently Asked Questions
How long does strawberry tiramisu need to chill?
Chill it for at least 4 hours, although overnight is preferable for the best texture and flavor.
Can I use store-bought strawberry sauce?
You can, but I recommend making the homemade strawberry sauce from the recipe. It takes only a few minutes and gives the tiramisu a much fresher strawberry flavor.
Why is my strawberry tiramisu too soft?
Make sure the mascarpone filling is whipped until it reaches stiff peaks and that the dessert has had enough time to chill. Also avoid oversoaking the ladyfingers, as they will continue absorbing the strawberry sauce while the tiramisu rests.
Can I freeze strawberry tiramisu?
I would not recommend freezing this recipe unless you’ve tested it yourself. Mascarpone and whipped cream can change texture after freezing and thawing, and the ladyfingers may become overly soft.
